Elliott is a very fussy eater and no matter how hard I try with different meals, different tastes and textures and a lot of persistence, I keep having plates pushed to the side and hear the word ‘yuk’ a lot.
There are two things though that my fussy eater does love and they are milk and smoothies. On most mornings Elliott will run to the cupboard and pull out his favourite smoothie cup and proceed to the appliance cupboard and start to pull out my favourite appliance, the stick mixer. But a little while back Elliott started to have some tummy issues, and a week off dairy as suggested by the doctor really helped and so I decided to find alternatives, one of them being almond milk.
Not long after making the change to almond milk, I was asked to try So Good’s new Almond & Coconut Milk and started adding it to our morning smoothies. Elliott and I loved the taste and best of all it is dairy free.
For me, making smoothies in the morning while I’m still half asleep has to be easy and of course, the smoothies have to be to the liking of my little fussy eater, so I created 4 kid friendly (and parent friendly) smoothie recipes using So Good’s New Almond & Coconut Milk. The good thing about these recipes is there’s little preparation in terms of cutting up or peeling fruit and they use fruit & greens that you will always be able to have on hand, nothing fancy! And the best thing of all, there’s hidden greens and other superfoods that even the most picky eater will not taste (I have photographic evidence below)!
Very Berry Smoothie
1/2 cup So Good’s New Almond & Coconut Milk
1 cup frozen mixed berries
1/2 cup plain Greek yoghurt (you can omit this for dairy free)
1 teaspoon honey
1 medium banana
Add the frozen berries and blitz in a blender or with a stick mix and then add the banana and blitz again. Add the yoghurt, honey and So Good Almond & Coconut Milk and blitz until combined.
Kid Friendly ‘Green’ Smoothie
1 cup So Good’s New Almond & Coconut Milk
2 handfuls of baby spinach (you could substitute this with baby kale)
1 cup mixed berries
1 tablespoon chia seeds
Optional – a dash of honey.
Blitz the mixed berries in a blender or with a stick mix first, followed with the spinach and then banana. When these have been broken down, add the So Good Almond & Coconut Milk and chia seeds and mix until the milk has combined.
Here is the evidence of a fussy eater enjoying the ‘green’ smoothie!
Choc Banana Smoothie
1 cup So Good’s New Almond & Coconut Milk
1 tablespoon honey
2 bananas (frozen or alternatively blitz 4 ice cubes before adding other ingredients)
1 tablespoon good quality cocoa powder
Blitz the bananas first (or ice cubes if not using frozen bananas). Add the So Good Almond & Coconut Milk, honey and cocoa powder and blitz until combined.
1 x cup of So Good’s Almond & Coconut Milk
1 x large banana
1/2 cup frozen mixed berries
1/2 cup traditional rolled oats
2 teaspoon LSA (ground linseed, sunflower seeds and almonds)
2 x teaspoon honey
1 cup greek yoghurt (you can omit this if you’d like dairy free)
Blitz the frozen berries first followed by the banana until it’s creamy. Add the all the other ingredients and blitz until combined.
