Chocolate and Walnut Fudge #MummyMondays

Our renovations have been at a halt for a number of weeks now which also means that I have an amazing new oven sitting in my kitchen which I can’t use because it hasn’t been connected to the electricity and gas yet. I had the baking bug big time on the weekend, so many things I wanted to bake in the oven including pumpkin scones with my freshly picked homegrown pumpkins, but I just couldn’t, so in the end I decided on making a no-bake slice.

Recipe type: Slice
  • 100g of coconut oil (when I measured it out it was hard) Alternatively use 125g butter.
  • 2 tablespoons golden syrup
  • 395g sweetened condensed milk
  • 1 cup brown sugar
  • 100g milk or dark chocolate
  • ½ cup chopped walnuts
  • N.B. I decided to try coconut oil in this because I didn't have enough butter and I actually really love the hint of coconut flavour.
  1. Melt butter in a saucepan.
  2. Once the butter is melted, add the golden syrup, condensed milk and brown sugar and stir over low heat until it starts to boil.
  3. Reduce the heat and simmer lightly for ten minutes, always stirring.
  4. Remove from the heat and let the mixture stand for a couple of minutes.
  5. Add the chocolate to the mixture and mix until smooth.
  6. Stir in the walnuts.
  7. Pour into a well greased 7cm x 25cm slice tray.
  8. Refrigerate until set (I did it for about 3 hours) before cutting into squares.

Now I have to try not to eat the whole thing!

      Give it a try, it’s super easy. Renovations are at a bit of a stand still at the moment due to waiting on the builder. We have an almost finished kitchen though! Will definitely share photos.

    I’m impressed by the sound of that homegrown pumpkin and I love, love pumpkin scones but this slice looks pretty amazing too. Hope those renos wrap up quickly for you – can be such an exhausting process.

    We were minus an oven for a week recently. Amazing how much we come to rely on them’ but yum that fudge sounds great.

    Fudge is one thing I’ve never really gotten into. Its always too sweet for me to eat although I like the idea of the walnuts.
