Marble Cake: Conventional & Bellini Intelli Recipes

Back in December Elliott had his 4th birthday and I felt as though I was constantly making cakes! I made a Monster Truck Cake for his Monster Truck Party, I made vanilla cupcakes for his daycare class and because he wanted a ‘rainbow cake’ I decided to make this marble cake. Thank goodness for being able to convert these into Bellini Intelli recipes!

Bellini Intelli Recipe

Marble Cake: Bellini Intelli Recipe + Conventional

Ingredients
  • 250g butter, softened
  • 1 teaspoon vanilla extract
  • 1¼ cups caster sugar
  • 3 eggs
  • 2¼ cups self-raising flour
  • ¾ cup milk
  • Whichever food colourings you like: I used pink and to make the purple I used pink and blue.
  • 2 tablespoons cocoa powder
  • 2 tablespoons milk, extra
BUTTER ICING
  • 90g butter, soft
  • 1 cup icing sugar
  • 1 tablespoon milk
Instructions
  1. Preheat your oven to 180°C/160°C fan-forced.
  2. Grease a round cake pan and line with baking paper.
  3. Add the butter, sugar and vanilla into the Bellini Intelli bowl.
  4. Mix for 25 seconds on speed 7 until the ingredients are light and fluffy.
  5. Add the eggs to the mixture one at a time, pulsing for 5 seconds in between each egg to combine.
  6. Scrape down the edges of the bowl.
  7. Add 1 cup of flour and a quarter cup of milk to the bowl and mix on speed 5 for 10 seconds.
  8. Add the remaining flour and milk and mix on speed 5 for another 10 seconds until combined.
  9. Split the mixture into three bowls, keeping one portion in the bellini.
  10. Add the desired colouring to each of the two bowls.
  11. To the portion of mixture in the Bellini bowl, add the cocoa with the extra 2 tablespoons of milk and mix through on speed 4 for 15 seconds or until combined.
  12. Drop alternate spoon fulls of each mixture into the greased cake pan.
  13. Move a knife or skewer through the mixture to form patterns.
  14. Bake in the oven for about 1 hour.
  15. The cake should be ready when touched in the middle and springs back or when a skewer inserted comes out clean.
  16. Stand the cake for 5 minutes in the pan and then turn it onto a rack to cool.
BUTTER ICING
  1. Rinse out your Bellini bowl and add the mixing implement.
  2. Beat the butter for 30 seconds on speed 3 or until it's light and fluffy.
  3. Add the icing sugar and milk and mix again for 25 seconds on speed 3.
  4. Tint with your prefered colouring.

Conventional Recipe

Ingredients

Same as Bellini Recipe but flour should be sifted.

Instructions

  1. Preheat your oven to 180°C/160°C fan-forced
  2. Grease a round cake pan and line with baking paper
  3. Add the butter, vanilla and caster sugar to a medium bowl and combine with an electric mixer or food processor until the mixture is light and fluffy.
  4. Scrape down the sides of the bowl.
  5. Add half the flour and milk, stir.
  6. Add the remaining flour and milk, stir.
  7. Split the mixture into three bowls.
  8. Add the desired food colouring to two bowls.
  9. Combine the cocoa powder with the two tablespoons of milk in a small bowl.
  10. Add the cocoa powder mixture to one of the portions of mixture without colouring and stir until combined.
  11. Drop alternate spoon fulls of each mixture into the greased cake pan.
  12. Move a knife or skewer through the mixture to form swirl-like patterns.
  13. Bake in the oven for about 1 hour.
  14. The cake should be ready when touched in the centre and it springs back or when a skewer insterted comes out clean.
  15. Stand the cake to cool in the pan for 5 minutes and then turn out on a rack to cool.

Butter Icing

Follow the exact same instructions as in the Bellini recipe but replace the bellini with something like an electric mixer or food processor and beat for the same amount of time.
