  • 2 eggs
  • 1/2 cup honey
  • 1/2 cup oat flour rolled oats blitzed into fine crumbs
  • 2 cups desiccated coconut


  • Preheat oven to 180 degrees Celsius (356 degrees Fahrenheit)
  • In a medium bowl, whisk the eggs
  • Add the honey, oat flour and coconut to the eggs. Stir until well combined.
  • Using a dessert sized spoon, scoop out spoonfuls and shape into a ball. Place on a prepared baking tray.
  • With a fork, gently pretty the balls flat.
  • Bake for 15 minutes or until golden.
